Praise for Today – Joy of the Lord = Strength
When my appetite wins and I give in to cravings for junk food, I don’t like it. I searched the Bible for new inspiration. Where could I find a new source of strength to face the same old temptation? I found just 8 short words in Nehemiah.
“…the joy of the LORD is your strength.” Nehemiah 8:10
Could it be that when I lose my focus on the joy of the Lord, I also lose my strength? I want to let myself feel the joy of the Lord. I have so many blessings. I don’t want to forget them. When we’re feeling tired and stressed, we can look for new strength by remembering the many ways He brings joy to our lives.
Recipe for Today — Strawberry Shortcake
Strawberry Shortcake

Ingredients
- 1 cup Bisquick® HeartSmart
- 2 Tbs sucanat (dehydrated cane juice)
- 1/3 cup almond milk
- 2 cups sliced strawberries
- 1 can coconut milk left in refrigerator over night (see note*)
- 2-3 Tbs Agave nectar or other sweetener (maple syrup, sugar, honey)
Steps
- Preheat oven to 425° F
- Mix together 1 cup Bisquick, 2 Tbs sucanat, and 1/3 cup almond milk to form soft dough
- Drop dough in 4 parts onto ungreased cookie sheet to make 4 shortcakes
- Bake 10-12 minutes
- When done, split shortcakes in half and add strawberries
- Top with coconut whipped cream. Here’s how to make it: Open a can of coconut milk that has been cooled in refrigerator and scoop out hardened part (do not use liquid part) into a mixing bowl; add 2-3 Tbs Agave nectar or other sweetener and whip the cream with a hand mixer.
*Note: In order for the solid and liquid parts of the coconut milk to separate, the can of coconut milk should be full-fat and without guar gum included in the ingredients. If you get a can that doesn’t separate it, your coconut whipped cream will be a little softer but still good. It will take a little longer to whip with a hand mixer (about 10 minutes).
